"First we mix hot water with the malted barley, separate the water back out, boil, add hops and then we transfer it into a fermenter," he said, a process that is largely automated. "Once the unfermented beer is in, we add yeast. After a month, we are ready to package." Packaging is the labor-intensive work, said Hendler; with logistics involved in determining how much product goes into kegs, cans or bottles, and then transporting it be- tween warehouses.
