The restaurant's Executive Corporate Chef Andrew Omo introduced Linda Bean's Maine Lobster Mac & Cheese in November 2011 at a culinary demonstra- tion at Disney's Epcot theme park and Linda Bean's Lobster Tails of Joy™ at the festival's November Party for the Senses, an evening event with 20 Disney and invited chefs. The culinary creations were a hit, and in her first appearance at the festival, 50,000 herbed lobster rolls were sold in 45 days. Her Epcot festival treats have become favorite menu features in the Free- port restaurant. Linda and her chef's appearances in Maine and Florida are testimonies to the succulence of her authentic, traceable, sustainable, and now afford- able Maine lobster and its strong attraction to diners worldwide. In October 2011, HMSHost opened a new 180- seat lounge and restaurant at the Portland Jetport, Linda Bean's Maine Lobster Café, featuring her fam- ily recipes and lobster specialties for the pleasure of air travelers arriving in and departing from Maine's biggest airport gateway. With lobster offerings, even for breakfast, the Jetport location packs carry-on live lobsters for busy travelers, as well as convenient, fro- zen-packaged meals and treats of Maine lobster and crabmeat, plus Linda's award-winning clam chowder. In just a few short years, Linda Bean has injected a fresh new approach to the Maine lobster business, hoping to ensure that Maine's lobstering industry will thrive for generations to come. Her focus on making authentic Maine lobster more accessible and afford- able to the consumer is central to "Lobster for the 21st Century ® ," her trademark name and effort to support Maine's lobster industry and its dedicated small boat fishing families.
