Maine's oyster growing sector has taken on a life of its own in recent years. With an
increasing number of oyster "farms," where oysters are grown from seeds in cage systems
in salt water and tidal rivers, growers are able to control the harvest. Since 2020, the
result has been an increase in both the pounds harvested and the value.
