Baba Sushi owner to open fusion restaurant at former Fotini's in Bolton Weidong "Wilson" Wang, who owns Baba Sushi in Worcester and Sturbridge, bought the former Fotini's Restaurant in Bolton for $1 million on March 11. Wang plans to reopen the restaurant as a fusion between the old Fotini's and his own sushi chain, said Sara Gallant, general manager at Baba Sushi. Fotini's served Greek and Italian fare, including handmade pizzas. e new restaurant, which will be called Baba and the Legacy Kitchen, will include the most popular items from Fotini's and Baba Sushi using a dou- ble-sided menu concept. "ere were a lot of regulars at the old restaurant who would come several times a week," said Gallant. Anastasios Kessaris opened Fotini's in 2013 when he bought the property at 544 Wattaquadock Hill Road in Bolton. Kessaris and Wang are old friends, Gallant said. "[Kessaris] is older, so I think he's sort of been a mentor to Wilson," she said. e two will work together to start out the restaurant, but Wang will ulti- mately overtake the responsibilities. e restaurant is 2,000 square feet on nearly an acre of land, much of which is parking space. e buying entity in Friday's sale was Bolton Baba LLC, which is registered to Wang, Laurel Xie, and Wentao Huang.
